Kashk Bademjan

Ingredients
- 1 pack of Kadbanou Fried Eggplants
- 1 cup Of Kadbanou Fried onions
- 1 table spoon extra light olive oil
- 2 table spoons finely chopped garlic
- 1/2 teaspoon turmeric
- 3 tablespoon Kashk
- 3 table spoon hot water
- 1/2 cup dried mint saffron
Recipe
1- Microwave the eggplants for 2 minutes or defrost
2- Chop the eggplant
3-Add 1 table spoon of oil in a skillet
4- in a separate pan sauté 1 table spoon finely chopped garlic stirring often until the garlic starts to change color keep the other 1 table spoon of chopped garlic
5- Add Turmeric
6-Add salt
7- Add 1 cup of Kadbanou Fried Onion
8- Add 1 pack of chopped fried eggplant (5-6 eggplants)
9- Stir occasionally on a low heat for 2 minutes
10 Add 2 table spoons of the mixture of Kashk and hot water to the mixture
11- leave 1 table spoon of Kashk for the Garnish
12- Add Saffron
13- Let It cook for 2 minutes on a low heat and the set it aside to cool off
14- in a small skillet add 1 table spoon oil
15 Add 1 table spoon chopped garlic stirring often until the garlic starts to change color
16- Add Dried mint and let it fry for a minute
17- Add the mint and garlic as garnish on top of the cooked mixture 18 Add the 1 table spoon Kashk as garnish and taste
